Vegan Sweet potato brownies

INGREDIENTS:

1 large Sweet potato, peeled and cut into chunks 

1 soft Avocado

¼ cup Rice Malt syrup

¼ cup melted Coconut Oil

½ cup Almond Meal

½ tsp. Bicarb Soda

¼ cup cacao

METHOD

Pre heat oven to 180 degrees

In a microwave safe bowl, cook the sweet potato so that is soft and fully cooked

In a processor, add all the dry ingredients and blend

Slowly, add all the wet ingredients, blending and stopping machine to scrape down sides, blend again

Once mixture is fully combined, pour into a lined baking tin and smooth over with a spatula

Place in oven and bake for 30-40mins, or until fully cooked (test with a toothpick)

Let cool in tray, then once fully cooled, place in fridge to create a fudgy texture

Serve cold with a natural yoghurt and sliced strawberries
