INGREDIENTS:

 Base

1 cup of soaked almonds

1 1/5 cup desiccated coconut

½ cup pitted medjool dates

Cashew filling

 

1 1/2 cups of soaked cashews

1 teaspoon of vanilla essence

½ cup melted coconut

Juice from ½ lemon

Berry filling

1/3 of the mixture from the cashew filling

1 cup of desired berries (blueberries, strawberries, blackberries, raspberries)

METHOD:

In a food processer, blitz all the ingredients for the base, blend until mixture sticks together and is combined

Press the base in a cake tin in the bottom and up to sides so it is all spread evenly, place tin in freezer

Wash the food processer, and add in all the ingredients for the cashew filling and blend well, may need to scrap down the sides an blend a few times

Scoop out 2/3 of the cashew filling and spread evenly onto the base of the raw cake, place back in freezer

Add desired berries to the remaining 1/3 of cashew filling still in the food processor and blend well

Add the final berry layer onto the cake once the cashew layer is fully set, spread evenly and decorate with blueberries
